It’s time to freeze dill and basil!

It’s sunny and warm.  Local food is fresh and abundant right now.  Want to keep those memories and flavours going all throughout the winter?  Now is the time to get your basil and dill ready for the winter.

Most herbs such as thyme, savoury and oregano dry very well.  But others such as basil and dill have very volatile  oils that disappear quickly when dried.  The solution?  Freezing!

It’s easy.

Take 2 cups of cleaned baby dill or Basil (stems removed for the basil)

Chuck the herbs into a blender.  Pour in a half cup of water.

Blend until pureed.  Add more water as needed.

Pour blended mixture into ice cube trays.  Freeze.  Pop out the cubes, store in a freezer safe container in your freezer until you want to use them in dressings, sauces, dips, spreads, stews and soups throughout the winter.
