Spinach Quiche from smittenkitchen.com

Once again, www.smittenkitchen.com comes to the rescue.

Spinach Quiche
Adapted from Adapted from Bon Appetit, October 1991

1 3-ounce package cream cheese, room temperature
1/3 cup half and half (or milk)
3 eggs                                                                                                                                                                                                                                          1 pound fresh spinach, steamed until wilted, water wrung out and chopped
1/2 cup grated cheddar (gruyere works well, too)
1/4 cup grated Parmesan
4 to 6 green onions, thinly sliced (1/2 cup finely diced red or white onion or shallots work as well)
1/4 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 425°. Beat cream cheese in medium bowl until smooth. Gradually beat in half and half and eggs. Mix in remaining ingredients. Pour mixture into prepared crust. Bake until crust is golden brown and filling is set, about 25 minutes. Cool 10 minutes before serving.

Greens with Peanuts

From Judy Gorman’s vegetable cookbook

.5 lb kale, swiss chard, spinach or beet greens, ribs removed if kale or chard

.5 cup peanuts, toasted if you would like

3 tbsp oil or butter.

Steam the greens until tender.  Beet greens, chard or spinach will take 5-10 minutes, kale will take longer.

Run the greens under cold water to stop them cooking.  When cool enough, wring out the excess water from the leaves.

Crush peanuts in a food processor (not too much), or put them in a plastic bag and smash with a rolling pin until in smaller pieces.

Heat oil or butter in s pan, add greens until heated through, stir continuously.

Remove pan from heat, sprinkle with peanuts, add salt and pepper to taste.

Spinach Goma Ae

This is the Goma Ae Recipe that my friend Jill forwarded to me.  Now that local Spinach season has started, I plan on making big batches of this easy delicious Japanese salad.

Jill’s Goma Ae with Spinach

  • 2 to 3 tablespoons of black sesame seeds, toasted  (add a few white sesame seeds so it’s easier to monitor the toasting and not over-do it). When cooled, grind to a course powder.
  • 1 Tbsp sugar
  • 1 to 2 tsp of soy sauce (Japanese style preferred)
  • 1 to 2 tsp of rice wine vinegar (you could probably substitute with cold sake)
  • 1 to 2 tsp of sesame oil
  • 1 lb of spinach (boil or steam to wilt, then plunge in cold water to stop cooking.  Wring out with hands to take out excess water.)
  • Avocado, cubed

Add sugar and liquids to the sesame power, stir to a wet paste.  I would start with lower quantities of liquids and add more if necessary, to taste.  Stir sauce in to cover spinach evenly – I usually save a bit for garnish.  Divide to servings, and top with cubed avocado and remaining sauce.

This is a made-up recipe and I make it a bit differently each time, but it always tastes great so just play with it.  Make sure you have enough spinach as it cooks down to next to nothing.  You can use just white sesame seeds instead, but it won’t look as exotic. Goma  ae means sesame sauce in Japanese, so you can serve it on other things too, like green beans or other Asian greens.  I did try green beans once and I really preferred the spinach.  Blue Fish serves it with just avocado, tuna and daikon.

Cream of veggie soups are ridiculously easy to make. It gets even easier if you have one of those stick hand held immersion blenders in your kitchen.

-Peel chop and sautee one onion and a few cloves of chopped garlic on medium heat. You can sautee it in olive oil, butter, margarine, whatever, it’s your soup, do as you will.

-Add about 4 cups of chopped veg of choice to the pot (broccoli works well, so does cauliflower, butternut squash, potato and leek, carrot, corn choose any one of them)

-I like to sautee the veg a bit, getting a little bit of caramelization going.

-Add a quarter tsp of black pepper if you like black pepper

-Add 4 cups (1 litre) of vegetable or chicken stock.

-Stir the whole thing up and let it simmer until your veg is cooked.
How long will it take? Depends on the veg, broccoli will be done in just 10-15 minutes, butternut squash will take longer. Test it with a fork to see how smushy things are getting.

-When your veg is soft, grab that immersion blender, plug it in and CAREFULLY start blending the veg that is cooking in the broth. You can keep your soup as chunky or make it as smooth as you would like. If you have no immersion blender you can mash everything up with a potato masher, or for a smoother texture, let the contents of the pot cool and put small batches in your blender to whisk things up.

-Return everything to the pot if you have removed things for blending

-At this point you can add dairy to make your soup as creamy as you would like. Sometimes I leave it as it and just serve it with a spoonful of yogurt or sour cream. If you are on a diet, low fat yogurt can add a nice thickness of flavour to the soup. Don’t care about the calories? A half a cup of cream will do nicely. Worried that you’ll do the wrong thing. Take a small scoop out of the pot, and try it with a little yogurt. Is it nice? No, try some with a little milk, or some cream, or some sour cream, or some creme fraiche. It’s your soup, make it how you like it.

-Taste your soup. Is it bland? Does it need more pepper? Is there a spice that you have a thought that might go well with this vegetable puree soup that you have made? I like to add some ginger to my carrot soup, sometimes corriander, sometimes I add some curry powder to my butternut squash or carrot soup. My mom likes to throw grated sharp cheddar cheese into everything (you can’t really disagree with a move like that).

Once you get the hang of it, you can churn out a pot of soup in half an hour while doing 5 other things. It’s really that easy.
Serve with toasted Ciabatta, or Alpine grain bread and tada! Lunch is served.
